A poke bowl consists largely of fresh and healthy ingredients, such as various vegetables, grains, and either raw or cooked fish, seafood, or meat. All these ingredients provide proteins, healthy fats, and vitamins, offering high nutritional value.

A poke bowl is a versatile dish that can be customized according to taste preferences and dietary needs. Many components, such as rice or sliced vegetables, can be prepared in advance, making it easy to assemble the bowl quickly. The colorful arrangement of ingredients makes the dish not only delicious but also visually appealing.

The base of a poke bowl is sushi rice or quinoa. The right rice should be slightly sticky but not mushy or too grainy. Once the rice is cooked, rice vinegar should be added while it is still warm to maintain the proper texture and prevent excessive stickiness.

Another important part of the poke bowl is vegetables – you can use fresh, fermented, or pickled vegetables. Suitable ingredients include kimchi, ginger, avocado, cucumber, radish, seaweed, corn, and various beans.

For protein sources, poke bowls can include meat, seafood, or fish, served either raw or cooked. For vegetarians, falafels make a great alternative.

Sauce also plays a key role in poke bowls. Cooked rice can be topped with ready-made soy or teriyaki sauce, or you can mix your own preferred sauce. A good sauce can be made by combining soy sauce, honey, sesame oil, and various seasonings.

For finishing touches, sprinkle sesame seeds on top of the poke bowl.

Korean-Style Poke Bowl

Serves one

  • 150 g cooked sushi rice
  • 2 tbsp rice vinegar
  • 50 g kimchi and/or ginger
  • 50 g avocado
  • 25 g cucumber
  • 30 g radish
  • 50 g seaweed
  • 50 g edamame soybeans
  • 100 g chicken fillet
    • Alternatively, fresh or cold-smoked salmon, shrimp, or falafels
  • 2–3 tbsp poke sauce (e.g., soy or teriyaki sauce)
  • Sesame seeds to taste

Preparation:

  1. Cook the sushi rice and add rice vinegar while the rice is still warm. You can also use the rice later once it has cooled down.
  2. Slice the cucumber, radish, and avocado into thin pieces. You can use a peeler to get extra-thin and juicy slices.
  3. Prepare the chicken or, if preferred, salmon, shrimp, or falafels. For Korean-style chicken, use cooked kebab-style chicken slices seasoned with Korean spices.
  4. Place the cooked rice at the bottom of a bowl and drizzle with poke sauce.
  5. Add the pickled vegetables, fresh vegetables, seaweed, and beans on top of the rice in different sections of the bowl.
  6. Add the chicken or other protein source. Sprinkle sesame seeds on top and serve.

Make the poke bowl unique by adding fruits and vegetables of your choice. Also you can make it vegan by switching meat with tofu or other vegan option. If you want some extra kick add chili or some hot sauce of your taste. Make it for lunch or first course meal of nice healthy dinner. We have also main dishes!
