Fig and Honey Tart
Fig and Honey Tart is a sophisticated dessert that beautifully balances the rich sweetness of ripe figs with the delicate flavor of honey.
The buttery tart crust serves as the perfect base for a creamy filling and fresh fig topping, making this tart a delightful choice for elegant gatherings or a special treat at home.
The combination of textures—from the crisp crust to the smooth filling and juicy figs—creates a dessert that is both visually stunning and deliciously satisfying.
Ingredients:
For the Tart Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cut into small cubes
- 1 large egg yolk
- 2-3 tablespoons ice water
For the Filling:
- 1 cup heavy cream
- 1/2 cup cream cheese, softened
- 1/2 cup honey
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
For the Topping:
- 6-8 fresh figs, halved
- 2 tablespoons honey (for drizzling)
- 1 tablespoon chopped fresh thyme or mint (optional, for garnish)
How to Make:
Prepare the Tart Crust:
In a large bowl, whisk together the flour, granulated sugar, and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Add the egg yolk and 2 tablespoons of ice water. Mix until the dough begins to come together. If necessary, add more ice water, one tablespoon at a time, until the dough holds together when pressed.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the Oven:
- Preheat your oven to 375°F (190°C).
Roll Out and Bake the Crust:
On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Gently press the dough into the pan and trim any excess.

Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment and weights, then bake for an additional 10 minutes, or until the crust is golden brown. Let it cool completely.
Prepare the Filling:
In a medium saucepan, heat the heavy cream over medium heat until it begins to steam but not boil. Remove from heat.
In a large mixing bowl, whisk together the cream cheese, honey, granulated sugar, and vanilla extract until smooth. Gradually add the hot cream to the cream cheese mixture, whisking constantly until fully combined.
Whisk in the eggs one at a time until the mixture is smooth and well combined.
Assemble and Bake:
Pour the filling into the cooled tart crust. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the edges are lightly golden.
Allow the tart to cool completely before adding the topping.
Prepare the Topping:
Arrange the fig halves on top of the cooled tart. Drizzle with honey and garnish with chopped thyme or mint, if desired.
Serve:
Slice and serve the tart at room temperature. It pairs wonderfully with a dollop of whipped cream or a scoop of vanilla ice cream.
Chef’s Note: For an extra touch of flavor, you can add a pinch of sea salt to the honey before drizzling it over the tart. If fresh figs are not available, you can use dried figs; just rehydrate them in warm water before slicing. The tart can be made a day in advance and stored in the refrigerator. Allow it to come to room temperature before serving for the best texture and flavor.
