Blackberry Lime Bars

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour

For the Blackberry Lime Filling:

  • 1 cup fresh blackberries (or thawed frozen blackberries)
  • 1 cup granulated sugar
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1 tablespoon lime zest (from about 2 limes)
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting (optional)

How to Make:

Prepare the Crust:

  • Preheat your oven to 350°F (175°C).

In a medium bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Press the mixture evenly into the bottom of an 8-inch square baking dish lined with parchment paper or lightly greased. Use the back of a spoon to press it down firmly.

Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Prepare the Blackberry Lime Filling:

In a medium saucepan, cook the blackberries over medium heat, stirring occasionally, until they break down and release their juices, about 5-7 minutes. Use a potato masher or fork to mash the blackberries. Strain the mixture through a fine-mesh sieve to remove seeds and obtain a smooth puree. You should have about 1/2 cup of blackberry puree.
