Dragon Fruit and Spinach Salad is a refreshing and vibrant dish combining the exotic flavours of dragon fruit with nutrient-rich spinach. Dragon fruit, also known as pitaya, originates from Central America but is widely cultivated in Southeast Asia. Its mildly sweet taste and striking pink or yellow skin with white or red flesh dotted with tiny seeds make it a tropical delight. For the Salad:

  • 4 cups fresh baby spinach
  • 1 dragon fruit, peeled and diced
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/4 cup pomegranate seeds
  • 1/4 cup slivered almonds, toasted

For the Dressing:

  • 3 tbsp fresh lime juice
  • 2 tbsp honey or agave syrup
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  • Add the spinach, dragon fruit, strawberries, blueberries, and pomegranate seeds into the bowl and mix well.
  • Toast the almonds for 1 to 2 minutes until golden. Let it cool.
  • Add black pepper, salt, olive oil, honey, and lime juice into the small bowl and mix well.
  • Drizzle the dressing over the salad and toss to coat.
  • Sprinkle the toasted almonds.
